Chicken and Dessert Recipes

I have two new recipes to share, which are both chicken.  We ate these two different weeks though... I try not to have the same meat more than once except when eating leftovers.  Btw... I love leftovers.  Why?!  Because that's a night I don't have to cook a whole lot... I'm really not a huge fan of cooking or cleaning up the mess that comes with it.

The first recipe was a new one to us.  It was very good and says that it will feed 4... know that if your husband likes "man servings" or goes back for 2nds, you'll be tight on having enough for round two!

Ritzy Chicken

Ingredients:
• 1 egg, beaten
• 1 sleeve Ritz crackers (crushed in a sandwich bag)
• ½ tsp garlic salt (or more if you like it like we do!)
• ½ tsp black pepper
• ¼ tsp paprika (opt)
• 2 skinless, boneless chicken breast (cut into bite sized pieces)
• 3 Tbsp butter, cut into pieces

Directions:
1. Preheat oven to 375 degrees.
2. Mix chicken with the beaten egg until well coated.
3. Drop coated chicken into bag of crushed crackers. Close and shake until well coated.
4. Grease an 8 inch. Square baking dish.
5. Arrange crumbed chicken evenly into dish and top with butter pieces.
6. Bake for 40 minutes or until chicken is no longer pink and juices run clear.

Notes:
• Serves 4
• Great dipped in a salad dressing

This recipe probably falls under comfort food... it's so good.  You can make it healthier by using fat free ingredients too.

Cheesy Chicken Crescent Rolls

Ingredients:
• 2 boneless skinless chicken breasts
• 1 can crescent rolls
• 1 can cream of chicken soup
• 1 C shredded cheddar cheese
• ½ C milk

Directions:
1. Preheat oven to 350 degrees.
2. Bake chicken breasts until fully cooked at 350 degrees or boil them in water until cooked.
3. Once cooked, cut each breast into 4 strips.
4. Roll each strip into a crescent roll. You should have 8 total.
5. Mix soup, cheese, and milk in separate bowl.
6. Spread a thin amount of the mixture into the bottom of a greased 9x13 dish.
7. Place each rolled chicken in the dish.
8. Spread mixture on top and around chicken rolls.
9. Bake at 350 degrees for 20-30 minutes or until rolls are golden brown.

Notes:
• Makes 4 servings

This next recipe is one awesome tasting dessert.  My friend Jennie introduced me to this cake and I don't know if I should be mad (b/c I eat too much of it) or happy (b/c it's wonderful)!  I'll go with happy!  I did however make up my own name for it.  :)

Not Your Average Chocolate Cake

Cake:
Ingredients:
• 2 C sugar
• 1 ¾ C all-purpose flour
• ¾ C cocoa or dark cocoa (go with the dark!)
• 1 ½ tsp baking powder
• 1 ½ tsp baking soda
• 1 tsp salt
• 2 eggs
• ½ C vegetable oil
• 2 tsp vanilla extract
• 1 C boiling water

Directions:
1. Preheat oven to 350 degress.
2. Grease and flour one 9x13 baking pan or two 9in. round pans.
3. Mix together sugar, flour, cocoa, baking powder, baking soda, and salt in large bowl. Add eggs, milk, oil, and vanilla. Beat with electric mixer on medium speed for 2 minutes.
4. Stir in boiling water. The batter will be very thin.
5. Pour batter into prepared pan(s).
6. Bake 35-40 minutes for 9x13 pan or 30-35 for 9in. pans. Cool 10 minutes and turn onto wire racks and let cool completely. You can leave in 13x9 if you prefer.
7. Frost cooled cake with the frosting recipe that follows.

Frosting:
Ingredients:
• 1/3 C butter or margarine, softened
• 4 C powdered sugar, divided
• 3-4 Tbsp milk
• 1 ½ tsp vanilla extract
• Large or mini milk chocolate chips
Directions:
1. Beat butter with mixer on med. Speed in larg bowl until creamly.
2. With mixer running, slowly add about 2 cups of powdered sugar. Beat until well blended.
3. Slowly beat in milk and vanilla.
4. Steadily add remaining powdered sugar, beating until smooth.
5. Add more milk if necessary to get frosting to desired consistency.
6. Frost cake and add chocolate chips as garnish if desired.

**You probably want to refridgerate this cake due to the butter and milk in the frosting.  I personally like it straight out of the fridge!

The last dessert is one I'm just going to link up.  You've probably had it... at least if you are from the south and love some Paula Deen.  Yes, it's horrible for you, but if you want to take a winner to any function this is it.  It's also great b/c you don't bring much, if any, home with you and get stuck eating it yourself.  You would... every last bit.  Your husband will be scared he won't get much and talk you into "trying" it before you take it and then ppl will comment on the fact that some is missing.  It's worth it though.
